About this fondue recipe:
This mushroom fondue is delicious and can be served with a variety of foods. We serve with french bread and italian sausages, but try mixing it up with seasoned chicken or small bits of steak. This recipe is great for the winter season and will both warm and fill your stomach.
1 pound chopped mushrooms
1 garlic clove, minced
1 cup heavy or whipping cream
1 cup chicken stock
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon cornstarch
Seasonings: salt, ground black pepper, cayenne pepper (pinch of each)
Pinch cayenne pepper
French bread, cubed, for serving
Cooked sausage, for serving
Sharp Cheddar or Gruyere cheese for serving
1. In a large pan, warm olive oil and butter over medium-low heat. Add minced garlic and chopped mushrooms, cook for 15 minutes, stirring every few minutes. Add chicken stock and bring mixture to a simmer on medium heat; simmer for 10 minutes.
2. Pour mixture into a blender or food processor; blend until smooth, then set aside.
3. In a small bowl, whisk cream and cornstarch, them pour mixture into fondue pot. Add mushroom blend from earlier. Stir together. Add seasonings: salt, black pepper, cayenne pepper. Set fondue pot to medium-high and bring mix to a simmer, cooking until thickened, stir occasionally.
Serve with cubed french bread, cheese and sausage.
