About this fondue recipe:
Have a memorable family dinner with this chicken fondue recipe. Everyone at the table gets to cook their own slices of chicken breast, in a fondue pot full of hot chicken broth. Afterwards, top off the cooked chicken with a green chili cream sauce. Be sure to make extra chicken breath; some will evaporate or get absorbed into the meat.
2-3 lbs of boneless chicken breasts, 1/3 lb per person
8 cups chicken broth
1/4 cup sour cream
1/4 cup mayonnaise
12 ounces prepared chili sauce
1 tablespoon vegetable oil
1 garlic clove, minced
1 tablespoon onion, finely chopped
Salt and ground black pepper, to taste
Ground red pepper, to taste.
1. Cut chicken breast into slices. Season as desired. Put in refrigerator until ready to serve.
2. Bring prepared chicken broth to boil in fondue pot.
3. Warm vegetable oil in a small pot. Add onion and garlic. Sauteed for 30 seconds. Remove from heat, add green chili sauce, sour cream and mayo. Stir. Serve in bowl on individual cups.
4. With fondue fork or spear, dip chicken into boiling broth; cook for about 3 minutes. There should be no pink in the chicken.
Serve with green chili cream sauce.
