About this fondue recipe:
Similar to a casserole in preparation, this fondue dish is easy to make and doesn't require a lot of time in the kitchen.
2 cups grated Fontina cheese
1 cup grated Parmesan cheese
2 teaspoons cornstarch or flour if not available
2 tablespoons brandy
1/4 cup white wine
1/4 cup vegetable broth
1 tablespoon unsalted butter
1/2 cup finely chopped onion
1 garlic clove, finely minced
1 cup mayonnaise
1. Preheat oven to 350°F. In a large bowl combine cheeses and cornstarch. Toss cheese until fully coated. Set aside.
2. Over low heat, melt butter in Melt in pot, then add onion and garlic. Cook for 3-4 minutes, until softened. Pour in wine and brandy. Bring to a boil over medium-high heat. After reaching boil, simmer 30 seconds and remove from heat.
3. Pour mixture into a large bowl already containing cheese mixture..Add rest of ingredients: mayo, vegetable broth. Pour bowl into a 1-quart baking dish, cover, and bake in oven until cheese is slightly brown and bubbly. This takes about 30 minutes. Remove from oven, transfer to fondue pot, or serve immediately in baking dish.
Serve with french bread.
