Fondue Recipes
About this fondue recipe:
This delightful fondue recipes combines two classic Italian cheeses, asiago and mozzarella. It takes about 20 minutes to prepare and serves around 4 people. Enjoy this fondue with friends and family.

Ingredients:
2 cups grated mozzarella cheese
2 cups grated Asiago cheese
1 and 1/2 cups champagne or sparkling wine
1 tablespoon unsalted butter
1 garlic clove, finely minced
1/2 teaspoon dried thyme
1 tablespoon cornstarch or flour if not available
French bread, cut into small pieces for serving
Apple slices, for serving


Directions:
1. In a large bowl, combine grated cheeses and cornstarch. Toss until fully coated. Set aside.

2. In a fondue pot, melt the butter over low heat. Cook garlic and thyme in melted butter for about 90 seconds.

3. Move to medium-high heat. Add champagne or sparkling wine and bring to boil. Slowly add cheese mixture, stirring often to prevent lumps. Move to medium heat. Keeping stirring/whisking until fondue mixture is smooth and thick.

Serve with french bread cubes and sliced apples.

"I use Italian seasoning instead of only thyme, it seems to works great. Also, try using fontina cheese to either replace the mozzarella or use 1 cup of each, in addition to the asiago cheese. I like to use all three. Fontina cheese melts really well and has a mild, somewhat nutty flavor similar to Gruyere."
